Our founder, Erin Roy, grew up with a love for farms and nature in a small mountain town in New Mexico.

Living in the ‘Land of Enchantment’, she had relatives that ranched, friends that farmed, and worked in horse stables before attending university for her first degree in Animal Science. Erin’s life revolved around learning about farming and agriculture, and she saw the ability of the everyday person to become educated about food—something they need to consume every day. And not just for substance, but for health, entertainment, and community.

After realizing she enjoyed pursuing the business side of her field more, Erin received a Master’s degree in Agriculture with an emphasis in Business and Sustainability. Her research work included a project on the importance of starting new businesses with community support for sustainable products.  This later led to completing grant work for a local food cooperative, La Mantanita, as well as writing for a local food publication - Edible New Mexico. These experiences evolved into her starting her own homestead outside of Albuquerque, NM. She is now using her educational and marketing skills to start an agritourism business on their farm where she can use her passion and knowledge to teach others about farm-to-table.

Starson Roy, is a graduate out of Scottsdale Culinary Institute, a Le Cordon Bleu College of Culinary Arts. Starson has been in the culinary world for over 25 years. He has cheffed for restaurants and resorts such as the Inn of The Mountain Gods where he managed over 120 employees and has cooked for great’s like singer Robert Plant and actor Steven Buccini.

Starson left the chef world to be more present in his kid’s lives 10 years ago and is now the Center of Plate Manager for Shamrock Foods, New Mexico. He is in charge of growing the meat sector of his territory and enjoys helping clients grow their restaurants. Not to get out of the chef world completely, Starson still caters in his free time with his business Star Culinary Services and cooks for the homestead farm dinners and preserves food from the harvests. Starson loves to create farm-to-table dishes such as farm raised turkey and chicken bone broth, mince meat, pickles, braised greens, and much much more.
